Food IS Love: Dilly Stew

High nutrition is the cure for an immune system depleted by a life-time of stress. I know this because I have super hero energy when I do the right things, and slothfulness when I don’t. Staying on stop of my diet should be easy, but it’s not. Like with all things, I blame my mother.
My friends’ moms made hot dogs and macaroni and cheese for dinner, which was unheard of in our house because Italian mothers love to cook for you but are snobs in the kitchen. For us, dinner was either: Veal cutlets, Filet Mignon, or Baked Chicken with spaghetti and homemade ‘gravy’. Mom worked in the wholesale clothing industry in New York shlepping dresses from Gloria Vanderbilt, so I am lucky I ate so well. Food preparation started at 8 pm and sometimes we would not sit down until 10.
I do not want to eat what mom ate because I feel better when I eat a vegetarian diet. But there is a learning curve and how long to time things like barley versus chick peas and soaking cashews and weird ingredients they don’t have at the grocery store so I don’t do it. To me, ‘cooking’ is standing over hot pots and feeling dizzy so instead I buy frozen entrees and eat peanut butter out of the jar, so I remain weak and sick.
Two days ago I woke up and did not turn my phone on. I drank coffee and opened my vegetarian cook book and ALL THIS EXTRA TIME opened up for me. I read through it, wrote down ingredients to make several recipes, then went to the store to buy them. I did not text or tweet or pin or browse. To focus on something that seems hard, I need ultimate focus.

I change all flour to Paleo Flour because it has protein and makes everything more nutritious. I even made a Pumpkin-Spice loaf (it was supposed to be muffins but I have no muffin tins). I added carob chips and now it’s a healthy dessert, the only kind I will let into my house.
No more complaining and no more feeling overwhelmed. I am a girl who makes the kind of food I want to eat. And my planner totally helps me.
